Cyclodextrins
Cyclodextrins are cyclic α-1,4-linked glucose oligomers produced by enzymatic conversion of starch with cyclodextrin glycosyltransferase. The common α-, β- and γ-forms contain six, seven and eight glucose units, and their hydroxyl groups can be selectively modified to give methylated, acetylated, hydroxypropylated, amino or azido derivatives.
